Recently I was inspired to bake and take the “Thanksgiving Tofu Roast” (from a favourite cookbook of mine, Alicia Silverstone’s “The Kind Diet”) to my family’s Christmas dinner. Comments from game to try something new, meat-eating members of my family were favourable, the Tofu Roast was a culinary hit! I stuffed the Tofu Roast with a stuffing based on the  recipe from this cookbook but used Black Russian bread instead of the suggested cornbread and whole wheat & drizzled a bouillon cube plant-based gravy with a bit of beer mixed in to top it off!
